Happy St. Paddy's Day!
To celebrate the holiday of my ancestors (well, some of them) I'm sharing this excellent recipe for Irish Soda Bread. Enjoy with some green beer...
Irish Soda Bread
makes 2 loaves
4C flour
1C sugar
1 tsp baking soda
2 tsp baking powder
1/2 tsp salt
3 eggs
1 pint sour cream
1C raisins (optional)
1. Mix flour, sugar, baking soda, baking powder and salt.
2. Add eggs, sour cream and raisins. Mix until just combined.
3. Pour batter into 2 greased 8x4" bread pans.
4. Bake at 325 for one hour.
Uhhh I'm so making this on the weekend! Soda bread reminds me of my childhood! thanks jen...yeah and as if i need to do anymore baking...my roommate is really gonna kill me this time! :p
